What does "bleed" do?
Like the veteran's grenade ability that stacks 8 bleed; I don't seem to notice any difference when it doesn't have that ability. The enemies seem to be bleeding everywhere, but they still stay up the same time.

So the 8 stack bleed bonus perk really makes the veteran's grenade more of a anti-boss weapon than an horde clearer?

Damage over time. Try it out in the meat grinder to specifically see the amount. It's not insane

Just to note on this: I went to the Meat Grinder to test my knife out with a bleed perk, but uhh... That place isn't registering the perk. So can't test it.

well ofc we d not use nades for non-trash mobs. its trash clear tool but yes, it has ability to be more than that. an option, up to you.

I meant to say that it actually damages bosses over-time instead of just stuns them briefly

They die to the impact regardless so kinda doesn't matter at all?

Or maybe the perk doesn't work?

I don't think so. I've seen enemies bleed all over the place in the regular missions, even had enemies fall over dead. I think it's specific to the Grinder.

I've never had anything not work in grinder so kinda odd.

While I can't say for Veteran, my Ogryn's bleed shows in Meat Grinder. Damage seems low (about 6-8 damage per sec per stack of bleed) but the full effect is around 12 ticks to me that lowers damage as it reaches its end. Useful on Armored enemies like Maulers if you lack AP capacity, but chip damage will still take some time to kill.

Think of Bleed as bonus side damage to help with Elites and Bosses, Trash dies to fast for it to matter.

Damage over time ability that stacks on hit.

So lets say each hit inflicts one stack of bleed then the first hit will be

30 damage per second for 8 ticks

hit it again and now its

60 second per second for 8 ticks, if it was only 4 ticks left then its refreshes with the higher damage.

It will eventually reach a cap which different based on the enemy type. The more HP a mob has the more damage they tend to take as a result of bleeding. This also It scales partly with your weapon meaning low damage weapon will have a lower bleeding cap. This is why they are particularly good on boss and I've seen zealot kill daemonhost with their bleed knife. The hit itself was only 50 damage but the bleed was like 400 per second.

I notice carapace armor like the crusher tend to have significantly reduced damage while bulwalk and reaper takes huge damage per second from bleed.

You can try it out by buying a knife with a bleed effect and hit mobs in the meat grinder.
