Health is health, lose it all, you get wounded, get backup, one wound becomes corrupted.
Taking corruption damage (Like a tox exploder going off in your face) can also add corruption to wounds, degrading health and reducing the number of times you can be downed before capture.
Health percentage is your total health points. It also likely affects the value of each wound bar so having a high health buff and no wound buff might actually be detrimental.
It's also worth noting certain attacks and grimoires cause "corruption" which sort of cause wound build up and reduce how much you can heal from packs.
Wounds are basically "times you can get downed before you get instakilled". If you have 3 wounds, then you can get downed twice, assuming you don't have corruption beyond any of the wounds. The third time, you die. Two wounds, one down and then instakill. Etc etc. Amount of wounds you have also reduce the amount of max health lost when you get revived and now have a corrupted wound that reduces max HP, if you have 2 owunds and 100 HP, well it reduced your max hp by 50. If you have 4 wounds then one corrupted wound reduces your max hp by 25.
