First of all would you be able to follow the steps in this guide to make sure no other programs are able to control the audio volume of your headset/mic by checking the devices properties - https://support.ubisoft.com/en-Us/Article/000081204
Next, right click on the Volume/Sound speaker icon in your Taskbar and select Open Sound Settings.
Then scroll all the way down to the bottom until you hit the Advanced Sound Options and select App Volume Device Preferences.
You will see a 'Output and Input' option, make sure you have your game open and it should appear in the list of Applications here.
From here you can assign which device the listed applications will output their audio to. So under the dropdown column for Prince of Persia, select which Audio Device you'd like to output the game's audio to whether that be a headset or a speaker.
Please let me know how you get on after trying these two steps. There are always a number of things to check when audio issues can appear in game but these are a good first two steps to check.
