Those look like they drop on Bahamut difficulty, don't they? And if I'm at the suggested item level for Bahamut difficulty missions that also reward gear of around the same level, why would I bother going through them on Chaos and pick up tons of gear that I've already out-leveled along the way?
I'm familiar with Extra mode, but it makes you completely unable to die or run out of MP, and when there's no risk, the reward feels pretty meaningless.
I'm just wanting something in between ultra steamroll god mode and nut-grinding frustration from getting instakilled.
Chaos difficulty start lower in difficulty. So it can be good to do some Chaos to get used to being one-shot by nearly everything and still being able to kill things if your build is not great.
That's like complaining level cap being increased with new content makes old content obsolete, because you don't farm gear that is basic anymore.
Plus, its not like you can just get 200 rating out of the gate and jump straight into bahamut, you still need to get weapon.

You don't need to get a weapon. You can just use the smithy to increase the level of a weapon you already have to 200 or so, and with the free Warrior of Light gear the game just gives you after finishing the story, you're at average item level 200 immediately.
The game gives you a 200 set for doing one of the missions on chaos difficulty, which sets you up for bahamut. Also, if enemies are sponges, perhaps it is your build that is the issue? As a Raider, I hit for a rather obscene amount of damage and the hit is an invuln frame throw on most enemies. As a tyrant I stun lock enemies with my fists and expose elemental weaknesses, etc. Each class can do some pretty insane stuff, maybe you just got complacent with the easier fights? Chaos was just more damage but artifacts and enemies had more HP, where as bahamut is the same as chaos in terms of difficulty, but bosses change their tactics and you control difficulty modifiers.
Define damage sponge enemies, I can't say I'm an expert on this game but I have the impression that bosses are not designed to last less than 5 minutes, while you're also expected to properly either migitate incoming damage or avoid damage entirely.
Are you leveling up your jobs? Do you occasionally block/parry instead of just soul shielding? If you're suffering to beat a specific boss, have you tried getting some proper gear ready with appropriate effects and affinities to complement your build?

The short of it is, going back to Chaos to get those limit releases for the jobs you like to play. And while you play Bahamut difficulty and get those rewards in one swoop - that route is there for a) You're catching up quickly on jobs you didn't unlock originally and b) Extra Mode.
Then investing in your main offensive stat (master points and using the smithy, then upgrading your gear effects) and then for what you described, your defensive stats as well such as Stamina and Spirit. And then I say some Damage Taken at Max HP (Category 2 master points).
So if you're taking on mission level 250, you're job level 80.
If you're taking on mission level 300, you're job level 99.
Mission level 400? Job level 150.
And then the Armor of Light set is primarily aimed at players that just want to see the story able to use Extra Mode til' the end of the game OR having one exceptionally tanky gear set that they could upgrade (primarily in level) and serve them until the end of the DLC story. (e.g., +50% more HP, a good chunk of defensive stats, a strong incentive to use Lightbringer where you have to find a way to get that max MP back up there, and just in case - a revive.
This is before factoring in affinities or artifacts - both of which will help greatly if there is synergy.
However any time I try to get used to knives I just get my face handed to me repeatedly. I'm similarly really bad with katanas. Axes, maces and spears really click with me though. If you haven't tried all the classes yet I would say keep experimenting with them until you find the ones that just make sense for your play style. If your finding your defenses aren't what you would like them to be try going Knight with some Sage affinity to block elemental damage, and use Blood Weapon to keep topped off - really helped me shut down some bosses that stay all up in your business.
Higher level Bahamut missions quickly start needing more of a build focus unless you move on to later DLC and very endgame gear.
Gilgamesh you really start needing those limit increases to boost your base stats at the absolute minimum or you'll start quickly seeing limited damage to enemies, and some sort of build focus helps a lot. I did it with jobs at like level 80 or so, could have made things easier. You can buy some of the releases from the exchange shop at a minimum. The level goes from like 300 to 500, 10 levels per floor, so you'll need to account for that -- you can unlock a level 500 mission and farm some gear for a start. A big part of Gilgamesh is making sure to make the most of lower rift floors -- get lots of gil, avoid the portals that are fight bosses, etc. Always have a fat stack of consumables.
Lufenia same kind of deal. But if you can do at least the story part of gilgamesh you shouldn't really need to do much more tweaking to at least clear the story stuff. You can also farm some much better gear very easily as well.
