You don't have to do the scarlet missions.
You do have to do the blue missions that have unlocked. The prompts may have popped up in the midst of other things, but one directing you to the second blue mission at the Dragon Cave.
And if you've already cleared that, then the second blue mission at the Ancient Chaos Shrine.
Regrettably, my gear level is about 210 and the mission is 250.
Any ideas on how to get some higher level gear for this? Do I really need to spend my hard-earned anima crystals to upgrade my stuff? Gear drops don't seem to be nearly high enough to increase my level gradually if I wanna roll full artifact loadout.
For better or worse, the mission level 250 and 280 weren't originally designed to be cleared with a full set of artifacts.
Side missions can help out on the gear side of things.
Hallowed Massif's The Stymied is a side mission that let's the player run by the enemies, grab the key to the final room, then stun-lock an isolated malboro at the end for drops.
The Berserker (Raider) job with a greatsword or Marksman with Marksman 400% and the Starlight gun combo ability slotted on the aiming slot or Sage / Mage using fire magic might be used around this point to clear the content.

The alternatives would be trying to run a mission that is a higher item level than what you have and trying to wing the first few fights. Once you have the item level to avoid the penalty, deciding whether or not you want to continue with that mission or customize the gear and do something else with it.

Average item level 371+ is sufficient for the rest of Bahamut difficulty and the next difficulty's story/unlocks. So if you settle into some gear there, preferably one job affinity you want, preferably an artifact, then you can start to use the smithy to customize for a stat advantage.
