The game has different difficulties in the increasing order:
EXTRA [Unlocked when you are playing at CHAOS and above. Extremely easy, you-cannot-die mode, invincible, infinite mana etc]
CASUAL
STORY
ACTION
HARD
CHAOS [Unlocked when you complete game for first time]
BAHAMUT
GILGAMESH
LUFENIAN
The DLC is unlocked when you complete CHAOS mode.
So you can literally use the built in God mode to finish the game story on CHAOS and above.
Therefore completing that mode is actually easier than finishing the game on CASUAL [i.e. even easier than CASUAL] because like it was mentioned above, the game has a built in cheat mode called EXTRA cannot-die-casual mode.
SO I have to redo all the main missions on CHAOS difficulty to unlock DLC?
What if I do the missions out of order, how do i know which ones ive done or didnt finish on chaos yet?
Then each DLC (3 of them) have their own difficulty mode and need to be played in them.
I don't believe you need to complete every mission in Chaos mode to unlock Bahamut DLC.
I completed a couple missions and got the achievment that I completed the game in chaos mode so...(maybe because I completed the last bonus mission in chaos mode).
The quick answer is "No", but there are good reasons for you to replay those missions: It is to unlock higher levels for your jobs and to get crystals, which allow you to unlock even higher levels etc.
Once you have completed the game once and unlocked CHAOS, you no longer need to do missions in the specific order.
Unlocking CHAOS will also unlock the next mission which starts the DLC.
Just a question since I haven't played the DLCs either:
For the 3 DLCs, does the gear level (and grind) increase massively?
I know for base game, it was level 300 max. Does it get beyond that with some insane grinding or not, in the 3 difficulties?
Like do you have to grind like crazy in each DLC to get to the next one?
How does it work?
DLC3 is stuck at 500 but drops the importance of equipment levels in return for expecting you to do proper builds.

I'm adding onto FreshMint's reply to you.
You don't have to grind crazy to get to the final portions of the game. I mentioned above that the game comes with an in-built God-Mode which allows you to literally breeze through the rest of the game once you have unlocked CHAOS and above.
So there are quite a lot of players who zipped all the way to DLC3 end game and went from there. Skipping the entire DLC1/2 experience altogether.
I did that myself too...until I realised that I didn't even get to experience the game and all the fun involved in DLC1/2, I missed everything. So I restarted from scratch and I'm still at DLC1 at this moment.
So the game is actually very flexible in that sense.
If I were to ever feel frustrated anytime in DLC1/2? The game already provides the in-built cheat mode so it's always there for me to zip ahead.

Kind of defeats the enjoyment and purpose of the game to turn on God mode.
Plus, I was really not bothered by chaos mode (really the game is more about builds than skill let's be honest) so I think I can handle the rest.
Currently with a pure DPS level 300 Berserker build that kills bosses in about two shots.
Let's see how I handle the DLCs.
