Weird subtitles??
For some reason the dub doesn't match the subs, did they translate this game based on the japanese dub? My brain hurts

Except for English, the subtitles for other languages are based off of the Japanese dub.

Damn, that sucks, i'll have to change the dub to japanese so my mind doesn't try to translate the english while having mismatched subtitles

It's extremely difficult to do direct translations if even possible at all. I feel the only people that really complain about this are people that try to be "purists" and only play in Japanese or only want the voice acting in Japanese. Then complain how nothing else is as good. Similar to what you said, it usually comes from watching too much anime and getting used to something that's not even real.

It ain't really hard. The english text and voicelines however are different than what the Japanese voicelines mentions.

An example that comes to mind is when Jack and the group confronts Tiamat.

When Jack asks Tiamat if she is Chaos, in the English version she mentions being one of Chaos' servants, then rants on how the power of the crystals flows through them, while Jack responds that he doesn't care how many of them are, he will kill them all and Tiamat taunting he is free to try it.

In the Japanese version however, she mentions specifically they are 4 "Chaos", proceeding to name each one by calling them "Wind Chaos", "Fire Chaos" and "Water Chaos" for each of the respective Crystals and Jack guessing the "Earth Chaos for the Earth Crystal" with a follow-up of "so that's how it is". Tiamat then says that she's been awaiting them and that they've finally come, finishing with saying their dreams will come to an end right there.

The English voiceover puts their own spin on the whole script, while trying to more or less keep the same intentions behind it.

The thing is nothing of what you mentioned changes the story. Also it is hard to give a direct translation because of differences in sentence structure, expressions, etc. This person however is trying to act like everything's entirely different and wrong in any language other than Japanese. It's like none of you understand what localization and translation even is.
