It plays kind of like a Dynasty Warrior game where most of your combos are all going to be some form of:
R1 -> R2
R1 -> R1 -> R2
R1 -> R1 -> R1 -> R2
They have a charge attack by holding the button and some small variations depending on the direction you're holding when you attack. Also the R2 finisher can be changed depending on the weapon type and as you level different jobs you start to unlock tons of abilities.
It has a souls-like feel, but not as difficult and the combat is a lot more fast paced. Enemies hit hard, but it's not as punishing as traditional souls games. You have a Estus flask system with potions that refill at checkpoints throughout the map.
As far as Monster Hunter comparison goes, it would be closer to Rise I think. The weapons all play differently, but not nearly like MH games. The enemy patterns aren't nearly as complex as MH games either.
They have online co-op and the entire game can be completed co-op. When you join other people's games you will take place of one of their NPC characters, but you will use your own equipment. So if fashion is a thing you care about, the host won't see your gear.
As Viper mentions, an action game - and a fast paced combo oriented gameplay with other options for sustained ranged and magic combat. And while you can try to play it slower and more paced, as you progress into the post credits and the DLCs, the game will expect more out of you. Either on the numbers, the synergy, or the gameplay. Co-op is possible for most of the base game and much of the DLCs, though a bit restricting around the late endgame for the guest. (Works better with a friend / partner than a random since you can voice chat and coordinate.)

At the extreme, you can destroy a boss phase in under 6 seconds. Or become so tanky late endgame in Rift (without trials) that you can go to the bathroom, take a pee break, wash your hands, come back, and the enemy will still be trying to slay you. And then throttle it down to have a longer flowing dance with the enemy if desired.
Greatsword in here is very smiliar to GS in MH.
Think Nioh mixed with Final Fantasy lore and mechanics (job system, etc).
It's way faster paced and more colorful than Dark Souls type of gameplay.
It's punishing/unfair like Nioh and you have exact same mission structure, co-op, etc.
I would recommend this for 2 player types:
- The OF FF1 fans who want to know more lore about FF1 and generally FF universe.
- Nioh/Wo Long fans, and generally players who like games that slap you in terms of difficulty.
The combat system is similar to Nioh in difficulty, it throws a gigantic amount of classes (jobs) at you, they play completely differently (for ex you can be Mage, Ninja, Monk, or Knight, etc), and bosses are hard.
