How is the level variety?
Tried it out on PS4 and the gameplay was fun and yeah the Chaos memes are funny but the levels did really seem like differently-flavoured corridors. Like even Nioh 1 had set-pieces and larger areas and more complicated maps. Is there good map variety in layouts or is mainly fighting through various types of hallway?

The dungeons are designed in a style similar to classic Final Fantasy dungeons. I wouldn't really call them hallways because a lot of the time that's just simply not accurate, but they are linear and push you in the correct direction. Some levels are more vertical or have you flipping switches to get around areas or have a more maze-like structure or activating things to open things in other areas, etc. If you're expecting Souls zones or high density Nioh levels you can run around in for hours this is not that, but every level has some kind of design style or gimmick to it that makes it different from all the other levels.

Mainly fighting through various types of hallways, it's more like a brawler I feel

Each of the levels are literally based on other mainline numbered FF titles.
The Pirate's Den's design is based on XIV Online's Sastasha dungeon, X's Mt. Gagazet is the snowy zone in this. There's also VI's World of Ruin, XIII's Sunleth Waterscape.. VII's Junon Underwater Reactor.. IV's.. Tower of Babel, I think? They're just themed on other FF's.

The levels are visually varied because they borrow from all the old games. A lot of people rag on the level design but it's honestly fine. Not top tier souls stuff, or maybe as good as the better Nioh or Wo Long levels, but they're far from just linear hallways. They tend to get better and more involved as the game goes on, with the low point probably being the FFXIII level which is probably the closest to an actual hallway. There were even a few levels I legit got lost in a couple times (FF9 and FF8s levels iirc).
