The OG it was much harder starting out, having to use granaries - the price and extra labour needed. But that was also part of the challenge of the game. For me, Pane is way too easy even on Hard.
So yes/no on granaries... ;P
You probably do not want your dock workers walking a million miles to storage yards to collect food meant for your peoples consumption so granaries are pretty useful.
Other than that, the reason for granaries would be that traders wont take from them. Seems like storage yards might be better, now.
The best way to deal with dock and production carts walking massive distances is to isolate their roads from the rest of the city. Yards will pull goods across open terrain with 'Get' commands, so you can use this to properly manage how goods come in and out of certain areas. You can look up 'isolated docks' or something to that effect.
Yards are way better than granaries at the moment it seems; the happiness impact seems pretty small, at least if you're producing a decent amount of food and your houses are stocked. Yards are so much cheaper, take less space, take less labourers, and can handle other goods. Sorting food for exporting is not something you need a granary for - just tell a yard near the dock or trader entry point to get 1/x, and export only when you have this amount plus some threshold (maybe 0).
I agree with the idea to make up for the fact I believe granaries need a TINY but more working force.
Having them be more space-efficient than the exact tile count would actually make up for both the cumbersome size and the worker # investment
OR change the bazaars to work like in the old game, though honestly that seems fiddly and I'd be wary of touching something that works fine.
