One is the general quality, consistency and duration of Nile floods in the area, which can be different depending on the mission.
The better and more consistent floods are and the shorter they last (2-4 months. Shorter floods are better because they leave more time to cultivate the farms), the better for floodplain farming.
Some missions have mediocre to bad flood quality overall, making meadow farms better, especially in the long term.
Having Osiris as a worshippable deity, especially if he's the patron god and gets a temple complex, is good for floodplain farming.
Another factor is the type of crops I can grow.
Crops with one annual harvest fare better on floodplain farms, while crops with two harvests per year (grain, barley and pomegranates) will yield more on meadow farms, providing the fertility can be maximized via irrigation.
Grain in particular also gives double the straw on meadow farms. If I'm making bricks, raising cattle or running a zoo, I'll seriously consider meadow-farmed grain.
Lastly, the location of fertile land can be a factor. In general, I want my food production to not be too far away from my housing areas, so the bazaars can easily supply themselves. Raw material farms like barley or flax I can be more flexible with. If a fertile area is too far away or too much of a hassle to get access to, I may consider skipping it if alternatives are available.
it's very interesting what you say about the flood of the nile. i'm having a lot of problems in the game and I've only finished a few missions, but i didn't know floods are different in different places. but, how do you know at start of a map what kind of flood it has?

i general prefer nile farms. Also i noticed on the new game, the carrier can swim, which makes it a lot easier, as you can get away with to less storage area. I also tend to overdue food. You also need less workers for nile farms.
however for the start of a mission hunting launches are best, as 3 hunters can easily produce enough food for 1 district.
Looking at the nilometer can give you a rough idea of what to expect, but you can only see one or two floods at a time. The higher the blue columns, the better the flood. The nr. of columns indicates how many months before the waters recede.
I'm not sure whether knowing this information before the mission starts is possible without prior experience or a way to look into the game's code to see how the mission is programmed, though.
What I do know is that in the original game, when using the mission editor to create your own scenarios, it was possible to set different parameters for Nile floods, among them the aforementiond flood quality (from perfect to no flood at all), duration (2-4 months), and month of onset. You could even set these parameters to random if you wanted unpredictable floods.
It's very likely that the campaign missions used these variables as well, and the remake's system is probably the same in that regard. I definitely remember seeing different flood patterns from mission to mission when checking the nilometer.
