On the large turn (biassono) on monza track you can hit the apex at 230 kmh and exit on 270 kmh.
If you lean only 30 degree you probably hit the wall
I am an italian track day rider and on misano i experimented that some time
Moto gp rider take that apex at 250 kmh And 50 degree of lean
There are a lot of vodeo on yt to see that in totally safe.

And some other…
as for high speed lean limit, it takes a very long, wide and kinda sharp corner to achieve that low angle at high speed. and bikes in game are certainly not gp bikes (max lean of road bikes are 55 approx)
I'm not so sure the lean angles are too unrealistic given the tires and other constraints personally. Maybe a few degrees short but it wouldn't be a massive upgrade for accurate bikes I wouldn't think.
