When he is about to attack you dodge and then you have time to hit him 2-3 times and then dodge away from him and then repeat it the whole time until you killed him.
It will take some time but until the end you will have him killed.
I did it that way and it worked.

It gets very pooring, for me just spam m1 enough times to use my dagger to deal massive dmg. Need healing? spam m2 with fast claw attacks to regain health. But overall game feels very unbalanced against some mini bosses.
Literally no point never increasing Vitality. Just go damage
Just dodge and attack pretty much like every other game, you just need to get used to the enemy's attacks and timings and also the game mechanics. You don't need parry or block.
Katar
The attack is very fast making it hard for the boss to dodge, and we'll need speed for a certain boss later.
The step up will interrupt every movement of every enemy, while we're in the air we can choose if we want the next hit to empower the saber (to lower more the white bar) or the claw (to lower more the green bar).
I don't know if the energy recovered is related to the damage we deal with the claw, but if so... more energy recovered as well.
But this early in the game we won't have the Katar maxed out yet. I remember beating him with axe too.
Which leads to an observation -> we can keep doing the other quests and leave the bosses for later, it will help not only to lvl up but also to get more weapons and lvl them up, and also to improve our own skills in the game.

And I would add... the long claw is better IMHO, it will help you close the distance and deal more damage and recover more energy in one single movement. And there is a passive for a second attack.
Like I said above, you can do the sub quests and leave the bosses for later, you'll lvl up, lvl up your weapons and get new ones, you'll also get more lore (in case you are interested).
My hits always overrule enemy hits, i can teleport all around, take away half the life force with my stick and if the enemy dodges i ignore that, strike the air and let it count as a hit.
Plus, regularly parries and dodges get disabled.
