IMHO, Thymesia is easier than Elden Ring but ER has some features that make it easier: coop, ashes and NPC who help for some fights so player is not alone.
The first times i meet this boss, it seems impossible to beat. you just have to persist, watch his movements, try different plague weapons, learn to parry.
I could not consistently get the timing to the point I found it frustrating too. I got stuck on the same boss - literally the first boss in what is pretty much the tutorial lol. It crossed that line to not being fun for me personally so I refunded

Steel Rising or Stranger of Paradise are the games you are looking for. They have options for lower skilled players and dont demand every player meet their excessive skill mark.
I beat Sekiro on PS4 and Grime on PC, both games relying heavily on parrying. I'm not good at parrying, preferring to dodge out of the way in traditional SoulsBorne fashion, however I was able to eventually pick up what those two games showed me. Thymesia leaves a lot to be desired when it comes to enemy feedback and I think this is a bigger problem than players are picking up on.
When I look at the feather system (crit parry) looking and feeling identical to the deflect system, I'm not inclined to think that enough thought was put into the combat system. Sure, deflecting and feathers get modified in different ways through talents, no argument there, but it's still the same effective system and having the same feedback problem.
As a bonus 'are you seriously right now with this...' moment, the lack of a visible numeric modifier to the Stats screen for the +Saber damage talents is an odd problem to have. So, too, is the execution heal not working all of the time -which may be related to button queueing or positioning if it's not actually a system with some bugs in it.
These aren't problems players should have coming into the game and it's going to cause needless frustration, which if quite clearly has. For my part, I have to put the game down for awhile and come back to it later.
