No, the game is trying to tune the fights to force you to use items on top of just regular combat I think. I died about 5 times on this fight until I started using status ailments, Rifle/Bow while my allies fought and then punished the low Ki.
Just stick with it and you'll get it. I agree some of the fights can be frustrating though.
I dont like to rely on consumables because they are finite and for every attempt that I die in a 100-0 blender I'm just throwing those items out the window. I realized I can soft cheese it just by switching characters a lot and abusing the aggro loss, but that just feels bad.
If you loot Plants and stuff while running around, consumables should be no issue as long as you dont go into the three-digit-fights. I did not use them most of the time as well for the same reason, then I took a look at my chest... and had 92 Poisen Stones without crafting ONE... just because of drops (before the final fight of Act1) and could craft around 120+ Stones overall as well (while I had 20-30 Fire and 30-40 Lightning stones stashed as well).
Dont sleep on them because you MIGHT need them later, if you dont win the Fight there is no use for them anyway ;)
Also Subsystems like Switching are meant to be used as well, you get hit and animation locked in a Bossattack? SWITCH! You can freehit the Boss and at least get a little bit of damage out even if you missed a Parry/Block/Dodge to cut your losses.
You only make the Game willingly harder by Ignoring Systems like that. Which is a valid point if you WANT to do this, but than it would be strange to say that the Fights are to hard if you willingly make them harder ;)
True yeah its just those times that I do use items and die before I even get a proc on element or whatever, so I save them till I know I'll have a decent run to get good use out of them which paradoxically is sort of the point that I don't need them. At any rate I ended up just dropping the difficulty to dusk and beat it first try lmao, such a huge difference between that and twilight. Theres also just quite a difference between bosses and regular enemies, bosses so far have oddly felt harder than hioh 2 bossed did for me, but regular enemies are easier.
The sequence of events just leaves a sour taste though, like I was excited to go to a new region, but when you get there youre on a leash till you beat the duo fight. blue demon>cutscenes>blue demon again with friend is just a bad flow imo.
There's no shame in dropping the difficulty but you'll have a bad time when you finish the game and attempt Midnight difficulty.
The game gives you more than enough tools to deal with whatever it throws at you, multi enemy fights are not even remotely as obnoxious as nioh 1 and the bosses later on do. alot more. than the blue demon does.
Getting emotional won't help you. The game is designed to be interactive, so interact with the bosses or keep getting evidently angry at the game while possibly playing worse due to it.
Bosses don't scale. The only scaling that is done is you when you join a MP mission.
