It's up to comfort. You have the flexibility to guard as many hits as you need to and parry the rest. You will take more ki damage and deal less if you don't parry every single attack, but it doesn't amount to a whole lot until Midnight (unlocked post-game) when it really starts to matter thanks to the inflated numbers on elites. The most important attack to parry is the final one in a chain usually in order to get the stagger and then attack with one of your specials. Also, if they're broken (red indicator,) do some damage to them first before cashing in with the downed hit. You generally have enough time to do a faster special attack followed by the downed hit.

You SHOULD parry red attacks if you're comfortable enough to. Parrying a red attack does a lot of ki damage and gives you a stagger. You can even parry grapple attacks, which you learn in the prologue. Again: it's up to comfort. You can actually go through the entire game without parrying anything, but it'll be longer/harder.

Better to parry all blows if possible or as many as you can. Single parry's or counters won't do much. The red attacks can be tricky in some cases. When they can do multiple attacks making one easier to parry at the end of the chain. So may want to roll out of some then parry. I would only dodge if an enemy is constantly hitting you with the same attack. If finding it difficult to parry then would use dodge instead. Until get stronger or better.
the parry time in this game is so ♥♥♥♥♥♥ short and even shorter in some combat stand becos they chance the parry animation for every stand while enemy atk speed is so fast in hard mode

Then lower the difficulty until you are comfortable enough with the timing to parry more consistently?
