The best stacking items would be Bustling Fungus for time you have to stand still you can heal rapidly really fast, Medkit once hit, you are given some healing but if stacked high it can be really helpful & Monster Tooth of course is based on kills which stacking it will heal you more as well per kill
Just don't forget to take the Hermit's Scarf at least 6 times for at least 35% chance to evade attacks which also helps, it probably doesn't have a limit now, but in the original game it capped at 35% with 6 stack
Meat Chunk/Nugget I feel isn't worth it, given the fact that it only works based on your primary attack, abilities don't affect drop chance, which poses a huge problem with it's mechanic, unless you have a character you're going to use Soldier's Syringe with, it could be helpful, otherwise easily avoidable

As for white healing, monster tooth is amazing early game, chunks mid game, fungus late game.
I always get the Money Purse green item first, then Infusion right after
