Castle Organization
Basic question: Is there a way to reset my officer holdings? After slogging through a few castles as a minor clan, I want to reorganize my territory. I want my most effective officers in positions that would be most effective for my current setup. Which means moving a large number of them between castles.

In previous games, I could just summon them all to my main base and divvy out new territory as I wished. The "summon" and "transfer" functions seem to require attaching each officer to a county or castle before it can be made. You can't--based on appearances--unland everyone and reland everyone. Or am I missing something?

All retainer who isn't assign as land holder, lord as promising for many years will be at your castle as attendant and can be assign to anywhere that is under your control (meaning don't create a province if you want to move them around).
I know, they are really terrible at that but there are way to around it.
Let's said you want a particular setup that need to be a little bit easier for the castle of your choosing.
Put them as substitute in your main castle to gain honor with policy activate so they can be lord later. From there, go to the castle of your choosing and pick the substitute.
Politic will increase Harvest/Income, so pick the lord with high POL for back end support and LEA for defense, VAL for attack, and INT for defense against enemy convert.

System Reform I 3 stars allows for changes of land holders and Lords.

Ah. I must be explaining it unclearly. I know that unlanded officers are attendants in the castle. I also know that system reform three allows me to move them around individually. What I want to know is if there is a way to unland them all at once so that I have access to them all as attendants and can start from the ground up.

Sorry, there is no mass button for unassigned them. They lose loyalty if you unassigned them also, you can do click each castle and click their name but other than that, nothing you can do but ask KOEI to implement the mass unassigned button.

Doesn't the summon command let you pick from ALL your officers, no matter their current employment? I could swear it does.

Mass unassign would make absolutely no sense in the context. You are supposed to roleplay as daimyo, not God. Daimyo assign lands as necessary and not just randomly reassign everyone en masse. Beside it's not even necessary in this game, since the game already has "swap castle" option that makes it convenient for you to move combat team into another front easily.

Yep, and I'm 99% sure the transfer or summon commands allow you to summon any officer from your clan no matter where he's located or what his current employment is (attendant, substitute, land-holder, etc), making a theoretical "mass unassign" button unnecessary.

Have a closer look at those functions, @rbarker1991.

Sorry I posted something without verifying and it was false so I took it down. If you see it it doesn't work to unassign as I thought. Had to do with Max Domain but Max Domain only works if there are empty Domains.

What Silva said is the most true. Select Dominion, a Castle and select Summon in the sub bar. You can basically skip the unassigning and get right to assigning.
