Underground, you catch angler fish, the IRL version having been described in a memorable video as "a nightmarish fanged potato with a little reading lamp on top." Also sometimes rocks, metal, and even more rarely lightstone.
Above ground, you have fresh and salt water. Salt water gives you things like sardines. Fresh water gives you sunfish -- and rainbow trout. So check ponds and rivers for your rainbow trout. And remember, anglerfish sell for 25g each.
The glow you see in the anglerfish pools is the little reading lamps on top of the nightmarish fanged potatoes. :) IRL, anglerfish live in the deep ocean, and have bioluminescent lures on flexible rods on their heads. When some other fish sees the glow and comes to investigate, they open their huge mouths and gulp it up. Anglerfish (there are many species of them) are absolutely fascinating.
One place they don't live is caves. But I suppose catching blind, colorless cave fish the size of your finger wouldn't be very interesting.
