As for the the spiky rolls, its a bunch of jumping over with some rolls until he goes into a frenzy then eventually stops so you can damage him. You can stand on a rock he can't break and wait for him to stop also.
I kite the rollybois to the edge of the water where they get stuck (make sure you wait in the water beyond their range), and once they've finished their charge/spit animation I head in and whack at them til they die
rollybois as described above (love that term for them, Solarwinds123. They are now called that for me when I see them).
I tend to jump/roll to avoid their rolling attacks, keeping distance. When they go into "whirlwind" mode, keep at a distance and avoid the stones. Once they stop, roll in and attack with impunity.
Thanks for the replies, everyone. Yeah, still having trouble with Voidbear. I finally have access to flour and olive oil now, so maybe I'll try making some baked goods before trying him again (while also upgraded to titanium sword). Also got the free revival every 40 minutes, so we'll see if that helps too...
As it stands, the only reason to bother with any of the titanium weapons is to unlock the 'Epic Set' collection weapon.
The electric wave blasts that the Voidbear spams happen more frequently than the cooldown on my dodgeroll, and I can't quite master the air-roll in the middle of a somewhat panicky battle, heh. I admit, I haven't yet tried just jumping over the blast to see if that works (maybe it just creeps along the ground?) but the fight didn't last long, so I didn't get much chance to experiment during it.
I've still only unlocked the Hardened Steel weapons.
I've don't have the Shield Weight Reduction skill to make effective use of the Ancient Forged Shield I found in the Voidbear dungeon.
I don't have the +100 HP skill unlocked (tho I do have the previous two).
I'm as yet unable to make potions, as I guess there's an alchemy table? I haven't found any Lightstone yet at all, much less the dust I'd need for potions anyway.
On top of all that, I still only have the 300 backpack, as I don't have anywhere near the 500g to buy the 400 backpack yet. I'm not looking forward to the grind I'll need to put in to make that much, not to mention the next level beyond that just so I can hold enough resources for the next town upgrade (450 mats).
Anyone have any tips, tricks, or even just a little encouragement? Is there some trick or mechanic for facing the Voidbear that I'm missing? Or do I just need to keep farming/grinding the caves and non-boss dungeons I've discovered so far in order to amass the gold and resources to keep upgrading to better weapons and gear? If I just need to keep grinding, I may have just lost all interest in continuing. Or maybe not. I'll step away for a bit and see how I feel about grinding it out after a break.

I get what you're saying and thanks for the advice, but at the level I was at when I first encountered the Voidbear I did not yet have access to wheat/baked goods. It's *very* easy to get to his stage without it, so it's somewhat of a surprise to find that need when it wasn't there before.
What helped:
The pike, definitely-- having just the extra distance between me and it to do damage helped a lot.
+100 Health-- I was regularly dropped to about 1/3 total health; I can't imagine trying the Voidbear with a normal health bar. There just too much damage you can't quite mitigate.
+2 extra belt slots-- two extra slots for food/healing items was essential, imo.
Baked/cooked foods-- Banana bread and mushroom stew. Ran through the four loaves of banana bread and 5 mushroom stews for healing
50% reduction for shield helped, especially considering the magic shield drops your movement speed by so much.
Conclusions: I can't imagine taking this sucker on without the above investments. Considering that you can reach the boss creature without half of the listed enhancements, I have to say either dumb down the boss a bit or make these items more accessible earlier.
Cooking food shouldn't be barred under such a heavy "gate", for example. Maybe have the farmer give a few seeds of wheat as a reward for giving him a house or an olive seed or two to get started down that path? Or maybe just having him reward the player with some really nice healing foods so that they get a taste of how effective it can be.
It just seems like you have to engage in a LOT of exploration prior to the voidbear just so you have the tools to defeat it.

I'll never understand why farming- and building-sims desperately have to add in those ultrahard dungeons (or in Stardew Valley: Mines) just to see players fail.
I'm an aged gamer, a lover for building and tending to crops and I'm having a stroke trying to kill the boar. The fight is so stressful and brutal and nonforgiving and hard that I end up mixing up my shortkeys due to sheer panic.
For me the game now is over before it could start.
Furthermore: I have tons of seeds for better crops but cannot plant them.
All my garden beds are greyed out, I only can grow the "tier 1 flowers and plants"
It makes me absolutely sad, especially when I see my fullest backback now laying around the cave forever.
And one thing to add: This is what difficulty sliders are for. :(
