Uniform Management
I think we should be able to manage employee uniforms on a per-business and employee-type basis. Right now I don't bother with separate uniforms and just mass assign everyone a default uniform regardless of what they do because there is no way to filter employees by their type/business, only sort by.

I propose a new tab (called "policies"?) in the business management screen to manage this. Of course, a whole tab for this is unnecessary but this opens the opportunity for other business-specific policies like bonus schemes, medical insurance, and such.

You may notice I also hinted at new roles like the Cook because in no restaurant have I ever seen the cashier run off to make my food before serving the next customer lmao. 1 cook on multiple stations, yeah... The cashier, absolutely not!

I create 3 uniforms .. Cashiers, Security, Suits.

I put Security on all Security Guards. I put Suits on Jewelry Store and all office workers. I put cashiers on everyone else, including delivery drivers can cleaners.

WRT your picture .. you absolutely could do that now if there are enough clothing items for the variations that you want.

Personally, I have never seen a delivery driver, cleaner or a security guard that I know of .. you basically only see cashiers and people sitting at desks. Cashiers are also the cooks. Changing that would be more accurate (cooks and cashiers, etc)

I'm fairly certain the dev has said that at some point you will actually see the cleaners at least working in your stores.

But yeah my main issue is that along with more clothing options, I'd like to be able to assign uniforms by business. So a restaurant employee will wear an apron but a gift shop employee will not. Perhaps some uniform options could have the business' branding/logo on it.

You can do that right now .. Create RestAP and assign it to restaurant employees. I don't think there is limit on how many uniforms you can create. I have not tried to create more than 3.
