As for extra hours, I know of a few people that like to run them but you're talking about extra employee's just to run night shift to get 1 or 2 people an hour if any. I have heard they get that sometimes others it's just flat 0. You can try it if you like to experiment and look at the last 24hrs on your customer graph on insight page. That will tell you how many (if any) customers you had during those hours.
Hmmm as I was writing that I thought maybe it would be better to have the smallest offices open during the weekend. I tried with the K1 offices first, then tried the other office sizes, while the K1 offices were open.
As for weekday hours, they vary by office type so far. I dropped profits for a few days to do some testing, but it was worth the data. 6 customers per hour on either side of peak hours (11 to 18) on one web dev agency, 7 customers per hour at 7-8 AM for two of my law firms. I have cut hours to match these flows and saved quite a bit per day for it. I don't know how much it varies per location, but it's been consistent per business for me.
