Days with nothing to do?
I am still early game, I haven't built an office yet, and I have 4 businesses that are slowly making money while i do deliveries most days. I want to get 1-2 more businesses before getting the office to make sure I have a consistent flow of cash. I also have a few loans I want to pay off.

Right now, it feels like there is nothing to do but wait. I need about 2 weeks of in-game time to go by while I accumulate money. What can my character do during this time? Right now I'm just trying to force them on the computer to kill time.

Hello! Two things about this:

1) Certain elements like "doing random things" don't exist as much at the moment since it's still in Early Access and the focus right now is more on adding business elements like the AI Rivals for EA 0.5! But more things like what you're talking about will be coming over time.

2) Of course, the choice to play slower and pay off loans and make 6 businesses before making an office will also impact the gameplay and make things slower overall! Once you add an office and set up your logistics chain, that will help you stay busy and grow even more rapidly to 10, 20, 50+ businesses!

It seems that the design intent of the game is for you to "waste" a lot of time (skipping time) on activities like playing video games, after all one of the achievements is reaching 150 years old. You'd never get there playing every minute of every day. Also, the activities provided give you "happiness" which you should always keep at 100%. In the early game I struggled to keep my happiness above 75% because I didn't know all the mechanisms to create happiness. So here's some of the things I've found so far...

1.) As you've noted, playing video games
2.) One of my favorites is renting a scooter and riding to Central Park and sleeping on a bench. This gives a lasting bonus similar to video games
3.) Watching TV. This gives a lasting bonus as well. IKA Bohag has a TV for $300.
4.) Working out. The chin-up bar is $700 at IKA, treadmill is $3800. Both of these give a bonus that lasts a short time, but if you do it every day you can build up the bonus into the weeks. Also, I do these before bed because they sap your stamina.

Pretty soon you'll have enough money to buy a boat, and that's another source of skipping time for a short lasting bonus.

Finally, there are other ways to up your happiness. Going to the casino boat on Friday night, going to the nightclubs around town and going to the gym come immediately to mind.
