I do this with my law firm.. everyone works 49 hours a week and then I have 1 house keeper that works 10 hours a week.
So most shops works fine as many said in here, but never take anything for granted, and check your own in game graphs. Infos are here for you to grab, justz need to find them in game.

DO NOT hire employees for 4 Days week/5 Days week/Free weekends!
Work hour preferences (No morning/evening/night) may be acceptable, but be careful not to conflict with the preferences of multiple staff members.
Work a 21 hour shift with full time working 7 hours a day. Allocate the remaining 3 hours to part time and share the setup for all days of the week.
You do not need to have more than 1 register manned at this time. You will see no difference in sales it's a bit of an exploit.. but as long as you have all registers you need to reach max capacity in the Biz screen placed, then you only need to man one of them and you will hit max capacity.
Max per individual without offdays is 7 hours
