What am I missing?
I’ve played the game for about 60 days I think.
I’ve got a gift shop, takeaway and the law firm that it “guides” you to set up. I’ve completed all the objectives up to the one where it tells you to have $2m dollars in your account. I’m currently only making between $1k-3k a day.

How am I expected to get to $2m?

Is that all it is, every other objective has taken about 10 mins to complete. This one seems like it will take a few days of game play to get to.

I suggest a clothing store in a medium sized retail space. You will need 4 racks for each clothing type (so 32 in total). make sure to set up your logistics and purchasing agent (I forget which import does clothes, but, there are only 4 of them at the moment so it shouldn't be hard to figure out).

my clothing store makes aobut 75k a day.

after that, invest in jewelry. getting a jewelry store started will take about 500k (the stock is very expensive), but, that should easily double your income. with 150k a day in profit, 2mill is just a few weeks away.

then just have fun with it. keep openning new stores, new types, new districts, experiment with office's, etc.

There are more objectives after the 2mil so keep playing also, there is an achievement for buying a 90mill boat and living to the age of 150!

True, the beginning tutorial goes step by step and guides you through a lot. At this point, though, you understand how retail, HQ and offices work, so you are able to expand a lot more without guidance. The further you get, the less "hand holdy" the game is.

15 customer gift shop alone can make 4..5k. Small one. Soda is complete crap, add something else. Like expensive flowers, cheap jewelry, wine. Have 100% customer care. It will increase money spent per customer significantly.
30 customer Fast food can make ~7k.
Add some 15 customer flower shop, liquor store - both around 3k easily.
Try to squeeze more out of lawyers - prices and stuff.
Expand a bit, 5..6 small shops should easily make 20k daily.

100 days until 2 million still sounds a bit long. So add larger shops. You earn from every customer visiting your stores. So guess where the money lies? In the pockets of your customers. Get them.

As you go, you will realize what does make more money, costs less to set up, etc. Check market insights. Uncle can't hold your hand forever. This game is not about following rules. No business is. It's about making money. Follow the money trail.

This game is about 2 things really traffic index and max capacity.

Get to higher numbers. Find shops that are 40+ index and have 30 or 45 cap and make a store there does not matter the district. Retail stores seem to perform better than food stores and are a lot easier to maintain.

Gift Shop
Flower Shop
Liquor Store
Jewlery
Clothing

As long as the market is good these will make you tons of money. In my game these stores all 30 cap make me:

Gift Shop in Garland: 27k
Flower Shop in Hells Kitchen: 31k
Liquor store in Mid town: 55K

Also make sure you max out each business, full market campaigns, interior 100%, max out the store hours shops usually perform very well 18 hours a day as long as they are staffed correctly.

Clothing is currently broken I saw a guy who makes like 3M a day off 3 clothing stores. I assume that will be nerfed.
