For the 2 businesses the game asks you to start with, I found these hours the most profitable:
- Gift Shop from 1 pm to midnight (full time employee doing 7 hours, part time doing 4 hours) You can open it 7 on 7 but if you want a closing day, Thursday is the least profitable.
- FastFood restaurant open 24/7: There are sometimes hours which has 0 customers, but it varies (sometimes even between noon and 1pm). Used 3 fulltime employees (6-7 hours) and 1 part time (3-4 hours). The variance in hours is that i let my most expensive employee work 1 hour less a day so it depends ;)
