Nah, when you get the quest to earn 2 million, I think that basically means the game has no new mechanics to explain for a while, and that you can do whatever you like from that point onwards. If your stores are earning you money without you having to be too involved with them, by all means: keep them!
The game basically just wants you to try out setting up stores on your own, of the type and size that you're interested in.
Certain stores tend to perform better than others. Food requires a lot of labor and resources for not much profit, so it's slower going... but you can earn a profit with food too, so if you think it would be fun to open up a restaurant: go for it!
Liquor stores, flower stores and clothing stores are easier to make money with though - they require fewer staff, you get a lot more money per purchase from customers (so you earn more money per sale) and supplying them tends to be easier.
Basically you just want more stores. Any stores, as long as they're profitable. Keep at it, and eventually you'll have earned 2 million.

Thats difficult to answer. Alot depends on design of a building and space and location. Most everything atm is located in one area. And most retail space has the same design and floor space. Try and pick something and open at least four of the same retail stores one store in each zone.
It is not difficult. People mentioning here some strategies are more than valid. As already said, a jewelry story is the only thing you want to have, if you want the big money for your ... "Big Ambitions". You get it?
Again: Go for a jewelry store. No excuses. Period.

If you are bored, then you can hassle around with a clothing store, with those 4-8 different types of clothings, from cheap to expensive, male and female and fiddle around with your deliveries try to get the wares in masses in time and ... well, I will still stick to a jewelry store, even if it is down the bottom of requested items around town, it still yields almost three to five times the revenue any other store could.
Ah btw, Roasted Inc. is also in Midtown, 1000m² building. Maximized in objects, wares and whatnot, and is still yielding more than clothing stores with the same meta-value.
