Sentinel is better (or more fun) IMO for ME2 and especially ME3. I'm playing currently as a sentinel on ME3 with a CD reduction of +200% and it feels godly. Shepard can use Throw every 2 seconds, Cryo Blast and Warp every 4, Overload every 5 and I can resist much more damage than an Adept, I kill everything with Chain detonations and barely have to pull the trigger, you can't get more wizard-like than this.
The Adept is too squishy and access to Singularity just doesn't cut it for me, not to mention Adepts have no Tech powers while Sentinels do (which limits your companion choice).
Adepts kick ass in Mass Effect 1, 2 & 3. In 2 you are going to have to do more shooting to strip abilities or get Energy Drain as your bonus power to survive getting through defenses first. But with the power overhaul in Mass Effect 3, Adepts are glass canons that can absolutely lay the smack down power-wise.
Sentinel is more of a tank than anything, as well as a jack of all trades. Decent, but not entirely my cup of tea, personally. I've seen some great Sentinels, don't get me wrong. Overall, I'd consider a Sentinel a support class unless you really know how to synergize--in which case, you can dominate the battlefield. Sentinels are better frontliners than picking off people in the back (despite Garrus being a Sentinel and his famous use of the sniper rifle). They can handle CQB scenarios (though not as much as a Soldier or Vanguard), but definitely play a bigger role in having a solution for every problem. Jack of all trades, master of none. Great in ME1, mid in ME2, and pretty low-tier for ME3. But then again, that's just my opinion, I could be dissuaded.
