how much has been changed?
i do a run through each of the games every now and again, got the legendary edition for cheap so i dont have to install each and every game again and do cross save stuff, overall how much of the game has changed? gameplay mechanics, camera angles, jokes, scenes? i recall hearing them removing like all of marandas ass shots from 2&3 though i never really cared for the character to start with, any little things that kinda made the originals great are no longer here?

As for the storyline, nothing has changed. The game has been ported practically 1:1. Some poor camera shots, like Miranda's butt, have been corrected, and some minor details like Elanos Haliat's race and Tali's photo in ME3 have also been changed. Other changes include the fact that all DLC is now an integral part of the game and now you don't get super weapons and armor at the start, but have to find them and buy them in stores.
As far as gameplay is concerned, the most has changed in the first game. In ME2 and ME3 it's mainly the increase in the number of “ammunition”. The interface was made similar to that of the sequel games, and the controls and companion management were changed to be identical to those in the sequels. The Mako has been changed slightly; it continues to be a block of wood, but is now slightly heavier, and the penalty for killing enemies in a vehicle has been removed.
Each class can now use all weapons, not just the ones they have training in. Enemies, on the other hand, are less vital, plus headshots do more damage. Some skills have been changed, e.g. marksman gives a bonus to headshots, and first aid regenerates faster.
Aha Tresher Maw are now more aggressive and have a new trick, and Saren now has a help in combat.

Maybe I'm on crazy pills but it also seems that they added locational damage to Mass Effect 1 (headshots doing more damage, leg shots knocking enemies down)
The only changes that really matter were in the first game. The combat and controls feel better and the UI looks better. But they also removed the Pinnacle Station DLC, not like I really liked that DLC anyways, but still. They also removed ME3's multiplayer, which is a bummer because it could have actually been pretty active considering that there are thousands of players daily.

i'll miss the ass shots, i liked that the classes in ME1 hard limited weapons, made them somewhat unique. shame i dont get that one DLC cerberus armor at the start of ME3 anymore since i would normally stick with that the whole game

DLC weapons and armor are not hard to find. The only issue is cash. You have to be more careful about your purchases now.
If you like Miranda's ass that much then turn on photo mode...and then you can view any part of her body from as many angles and close-ups as you want....
I forgot to add earlier. Weapons in ME1 now have different subtypes. For example, pistols are divided into automatic, semi-automatic and heavy ( with slower but more powerful single shot) .

EDIT:
I checked and the Ceberus Ajax Armor is available from the start or very early in ME3. I have a save after 5 hours of play and it's in the closet. I'm not 100% sure now, but it might be one of the few things we still get at the start.

Yes, it completely messed up the balance... My apprentice mainly uses pistols anyway.

ME2 and ME3 got very minor gameplay changes aside from more ammo.+You need to buy DLC weapons. I think in ME2 shield recharges slightly earlier.

ME1 got a lot of changes, including added cover to many fights, and some(major) fights have slightly different enemy compositions.

Mako got buffed+ there is no longer any exp penalty while dirving or max level cap for first playthrough.

Tresher maws got buffed, Saren can now summon allies so got buffed.

Weapons are more accurate and sniper scope sways MUCH less, AND ME1 now has headshot dmg so snipers are much better,
+Classes no longer have penalties for weapons they can not use.

Medigel recharges much faster.

Some achievements are easier to get or have been removed.
How do they work the levels from 60 to 30? Do they give you double points or just cap you at 30?

It's literally six of one, half-dozen of the other. 60 levels is the original game schema, in MELE you can opt (I think it might be the default) to 30 levels, which require twice as many XP and give you twice as many skill points to allocate. So it makes the leveling up much less fiddly.
