But if Maelons'data+Mordin is saved that would keep Eve alive.
But you must also disarm the bomb as that could kill Eve and most Krogans.
I also saved the Data,Mordin stayed Alive,Wrex was alive,And both side missions was completed before the priority one and Eve stayed alive.
So either some very rare glitch or you missed something.
I could be wrong about this but I believe the game autosaves at the start of every mission. Dunno how far back you're going to try these various solutions but that might be worth trying if you haven't already.
Also I'd encourage you to try the trilogy again. It's worth it! :-)
Well FWIW I don't recall ever having this happen in any of my playthroughs, so with any luck it won't happen again! :-)

Honestly, the only reason I bring it up is, because you seem to think it's going to ruin your play through if you don't have the data and you also stated if another thing goes wrong it will make you quit. Otherwise, I would say don't worry about one thing going wrong (really it doesn't go wrong, the story just goes in different direction).
Don't worry about a completionist run with everything being perfect. No matter which direction the story takes, it's going to be good. Don't you want to know what will happen if Eve doesn't survive vs. if she does?
If I read your posts correctly, this is your first run and it's unfortunate you already know all of the story possibilities. I think you did yourself a great dis-service by researching it all instead of just enjoying the game and it's surprises.
Maybe steam and EA launcher had some problem and data did not properly register.
Most of us in our blindplaytroughs likely did a lot of suboptimal decisions.
And some ppl intentionally makes a max mining playtrough making that worst decision but just bad enough so Shepard survives ME2 and ME3 will barely have any one alive.
