Normandy also gets bigger and bigger with each game, so you would also have to rework that, and you would have to add planet exploration in all 3 games or remove from all 3 because, again, it would feel prohibitive to be able to explore them in 1 but not in 2 and 3.
It would also completely destroy the pacing of each game so you would have to rework dialogue and story for it to work. Mass Effect 2 is very focused and short compared to 1 and 3, it's much more action packed, so to go from the more methodical exploring nature of 1 to the action packed nature of 2 would feel weird since you still have the entirety of 3 to beat and that is also a slower game than 2, + rework the story DLCs that are also essential to the stories.
You are essentialy asking for Legendary Edition but worse.
It also makes no sense to remake these games if you're not going to remake the ♥♥♥♥♥♥♥ ending
