I played M1 and currently M2 full-screen (Legendary edition only!)
Not fully sure, but the maximum in the settings is 2560x1440, and it is letterboxed. But if you have a monitor with this format, it is very ok.
For having it full screen on a 32:9 format, I edited an ini file:
It is located in your Steam game folder.
"STEAM\steamapps\common\Mass Effect Legendary Edition\Game\ME1 (then ME2 and ME3)\BioGame\Config\GamerSettings.ini"
Edit this GamerSettings.ini file, with notepad if you wish, and simply put your resolution in front of the correct line. Ex., for my display:
ResX=5120
ResY=1440
2 - BUT, the 2 sides have some ghost reflections from other visual elements (small lines) as it is overstretched.
However, it is absolutely not an issue when playing and after a while, it is so mild that you will forget about it.
Visually, it is very nice.
Otherwise, if you have a more standard ultrawide (ultrawide can mean many different things with nowadays monitors...), it is perfect and really 4K.
HDMI should be disabled though, as the game processed well the light by itself: be sure that you set a proper gamma calibration (t is in the game settings)
You may be able to get rid of the ghosting if you disable AA, I know it works with lower resolutions, I haven't tried with ultrawide yet.
If you have a widescreen panel, Flawless Widescreen is pretty much a must have.
