I don't even know where to begin on good mods that you want. Charted worlds for ME1 is a HUGE time saver, it puts map markers for collectibles on the various worlds you can land on. There's a mod for a faster and better handling mako. The expanded armories and Morlins shop mods also are great. There's a mod that lets you use all the different armors from the first game in 2 and 3 (because consistency matters). There's a bunch of consistency mods to make Tali, Liara, and other characters keep their appearance through each game instead of changing constantly. Just take time looking through. The top 20 pages or so all have mods worth using.
Also each game has a community patch.
1. MEHEM
A Ending Mod for ME3, there is a version that cuts the Citadal DLC to after the ending.
2. Multiple Romance
Romance multiple companions without restrictions, have all the girls.

4. Community Mods for bugfixes
(but they are not many bugs anyway)
5. Extended Galaxy Mods
(more locations visable in later ME games)
6. Improved Mining / Improved scanning
for faster ressource collection?

Infinite sprints? Higher reputation (renegade AND paragon), so that you can choose any option in a dialogue without being restricted to go only one road (no more paragon VS renegade).
Make sure your selected mods are compatible with ME Legendary Edition.
