The first two are fine in 4K with all the graphical settings maxed out, and then doing some file tweaking (which is simple and easy) to further polish graphics and some other things.
However, when you get to Mass Effect 3, playing it in 4K makes the whole UI extremely tiny, and you'll NEED a mod to be able to see if comfortably.
So if you don't have the original games, and can get this on sale, like now where it's $10 or less, then grab the Legendary Edition i suppose.
If you want to play on Windows 7/8.1 or even XP if you run a 'retro PC', then you'll need the originals, and at this stage with Steam and EA Play cutting off compatibility with everything below Windows 10, you'll need to try and get the discs.
EDIT: and unfortunately, GOG will never get the Mass Effect games. EA won't let them go to a platform unless they can hook you into their EA Play application to act as DRM.
I'm trying to buy my games exclusively on GOG these days because i despise being made to have the app running.
Which for me was great on ME3, and where I spend most of my hours on it, made some new and long time friends on.
