I've had no problems with ME2 and ME3 achievements.
When you're online with the EA app (while the game is running) the game thinks you already have all of the achievements. This means you can't unlock the achievement and so it won't trigger the achievement in Steam (it thinks you already have all of them, a good way to start with bonus powers).
If you want to avoid lengthy installs and work-arounds, close the game and go to the folder:
\Mass Effect Legendary\Save\ME2 and delete the file GamerProfile
OR for ME3 \Mass Effect Legendary\Save\ME3 and delete the file Local_Profile. You will only need to do this if the game was running while the EA app was online. If you're careful: you'll only have to do this once or not at all.
You'll then need to start the Legendary Edition Launcher from Steam, this will open the EA app in the background.
Open the EA app and click 'Go offline'.
Once you're certain you're offline, start the game. Any achievements you earn while offline this way will (usually) unlock normally. If it didn't unlock, check to see if the EA app crashed. Sometimes, if you save after what should have been an unlock and restart your computer the achievements -may- unlock when you start the launcher. Otherwise you'll have to reload your save, delete or switch your Profile and try again. If your profile already has the achievement unlocked, it won't trigger.
I highly recommend making copies of your stable Profiles (ie. ones that only have the achievements you have unlocked). They can simply remain in the folder with a different name. If you have to restore a profile, delete the existing Local_Profile OR GamerProfile and replace it with your copy. It will also keep your gameplay and display settings.
Back it up every time you close the game. You'll thank me later.

Thanks I will try these fixes, It was really frustrating seeing the archivements after completing ME1 on Insanity.. I am really interested in having all three games on the hardest difficulty as a personal challenge, seeing the medals helps the situation..
Personally, I used the offline method at the start of ME2, and I was lucky enough to realize that an achievement hadn't been unlocked, because the EA launcher had crashed without me noticing, and so the savegame was corrupted and it was no longer possible to get achievements, even if I'd loaded a savegame just before.
The easiest thing to do is to install the previous version of the launcher and prevent it from updating and that's all, rather than taking the risk of forgetting to go offline, having it crash without me noticing, or not making a copy of the backups every time.
