Adept can do a lot of comboing.
I have yet to try a melee-focused Infiltrator, but imagine that's quite fun as well
Vanguard feels too glass canon for my liking in terms of Zooming and Reaving and Shockwaving, then shotgunning, in ME2 at least. Might feel better in three for me.
Engineer was fun in ME3 for the dialogues involving telling people off, for thinking she's a brainless grunt, while also being able to Widow everything to death.
Each class:
Soldier: You shoot. And shoot. And then shoot some more. You had access to all weapons in ME1 classic version. It is the shooter class.
Adept: The space magician. But it can be a bit of a glass cannon, specially on the early levels. By ME3, you can basically stop using weapons and keep spamming spells.
Infiltrator: For most of the time, you will attack enemies from a distance using snipper. Occasionally, when in close quarters, you use a submachine gun. You can also cloak, and then make surprise attacks with a devastating shotgun blast.
Vanguard: The super-hero. It can be very fun when you win, but frustrating when you lose. You may find that you will die more often than with the other classes. It is risky, but not without its rewards.
Sentinel: Versatile, but somewhat lacking in specialization. It lets you have a taste of each of the 3 types of powers, and also has a very cool exclusive ability.
Engineer: A terrible class to try to speedrun, but an excellent one if you like to take your time and control the battlefield while advancing one meter at a time.
In my opinion, and I am someone who was able to beat the trilogy over 25 times, my verdict would be:
Soldier: The basic experience. I do recommend it if this is your first run of the series. ME1 in particular seemed to rely on the idea of Soldier being the main class, with the others being afterthoughts, or different flavors for those looking for a more varied experience in replays.
Adept: Fun, but you need to be defensive during early levels, and not expose yourself too much. You can only take so much damage.
Infiltrator: While I can certainly see why some people totally love this class, since it is very effective, Ive found it to be far too much repetitive and formulaic for my taste.
Vanguard: My least favorite. Only for those who are looking for risk, thrills and intense action.
Sentinel: I think it lacked definition.
Engineer: What a surprise! This is my total favorite. Specially by ME2 and 3. Having the ability to hack machines is great. Even better if you use Dominate as bonus power. If you are sided by Tali and/or Legion, you can outnumber any group of enemies easily. You can have turrets, drones, as well as turning enemies against themselves. Best class to troll the opponents and watch their lines crumbling as they are beaten one by one.
Now, how to get the most fun from each game:
ME1: Soldier class. Use the best Snipper Rifle, with 2 slots of items for extra damage, plus explosive ammo. And spec Shepard to cause a lot of weapon damage. This is like having a portable mako cannon with you. Instead of trying to mitigate the cooldown, let the weapon burn, but causing the highest damage possible. It works. Your shots are so devastating that they can eliminate entire groups of enemies.
ME2: Engineer, with Drones, Ai Hack and Dominate. Also, if Collectors are part of the enemy force, it is a good thing to bring Kasumi, and use her bonus power against harbinger, so you can freeze him.
ME3: Engineer. You spam the field with turrets and drones, while using AI hack and Dominate to keep enemies distracted. You can also use powers to trigger lots of explosions.
I'm playing Infiltrator now and it's amazing just how much they've improved the sniping since the original version. Pulling off headshots is a joy.
for ME1 vanguard is fun, insanity is a bit of a joke in me1 so whilst earlygame is a bit rough you quickly become basically immortal just running around with a regen barrier, yeeting ♥♥♥♥ around with overpowered biotics and shotgun ragdolling everything (even the final boss gets ragdolled around the arena with explosive rounds once his shield is down)
for ME2 biotics (sans warp, reave, barrier and charge) suck ass (atleast in insanity; id imagine theyre better on lower difficulties but immunity to them whilst armoured, shielded or barriered makes them only really useful when the target is basically dead anyway), and theres a bunch of fights where you really want a sniper rifle so im gonna say infiltrator (but ive only completed ME2 as a sentinel and infiltrator -currently playing through as a vanguard; but due to how battles are structured in ME2 you cant leeroy charge in and start blasting because youll just die and have to restart a prolonged engagement from the start which kind of kills the vanguard enjoyment factor as you basically play keep away for your sniper squadmates)
havent ever started ME3, despite having it on origin for years; conceptually though i love the idea of sentinel with defense drone bonus power
That said I'm playing a 'Sentinel' right now through ME1 which... Whilst I'm not having as much fun as a soldier, now I've gained a few levels isn't too bad. It also makes it easier to loot stuff rather than being forced to bring a tech class along.
Now that the Enhanced Edition exists, you can use whatever weapon you want to use, so an Engineer with an Assault Rifle is amazing in the first game. ME2 Drone seems weak until
you realize that it basically makes one enemy completely irrelevant as it distracts them and stuns them with zap. Incinerate is basically OP as well.
Then we get to ME3. Congratulations you have unlocked god mode. Incinerate again is basically a black Mage Fireball, Overload is Chain lightning, and your Drone is more of a bad ass. Welcome to the REAL mage of Mass Effect.

in the original once you had the 'kill X enemies with Y weapon' achievement you could use that weapon as your bonus talent (you can do this in LE to access the assault rifle bonuses/overkill; but the unlock requirement is now to complete the game ones) when creating an engineer (and other than weapon talents the only other bonuses worth considering for engi were singularity -because its good on every class- or stasis -which is a value 1 point wonder skill; relevant because engi is pretty skillpoint heavy already... could also be used to set up techmines which iirc only explode once the stasis wears off-)
