I personally do not care at all, i play games on "Normal" thats the (hah) normal way to play them in my book.
But if someone enjoys the challenge, why not?
Their attacks hit harder and are more punishing. Forcing you to use cover properly.
To me, I like insanity because the ME games feel too easy without this difficulty setting.
ME1 insanity is not really any different than the lower difficulties. You can just pop a defensive cooldown, stand out in the open, and mow stuff down with no problems.
ME2 insanity is kinda fun and thrilling, if a bit tedious at times. You have to proceed through the combats in more measured fashion, always staying in control.
Played ME1 on insanity as Adept, complete control with biotic powers. Does not work as good in 2 and 3 because armor and shields work differently. Vanguard is the most fun class to play for me in 2 and 3.
ME1 insanity is only hard if your abilities crash the game during a certain final boss fight.
ME2 was a bit more challenging for me, especially the scions.
ME3 feels like it's going to be pretty engaging on insanity.
One thing I've found in ME1 and ME2 re: insanity is that vehicular errands are incredibly tedious.
1st playthrough: Pick Paragon or Renegade, do it on like Normal (maybe Veteran) difficulty, and focus on unlocking stuff
2nd playthrough: Pick the opposite Paragon/Renegade, go Insanity, and have fun
Having played the whole trilogy several times over, anything lower then insanity is simply not a challenge anymore (depending a bit on what class you play as).
Also, unless it's been changed, you do face harder enemies and get more xp in the first game.
You can recruit Tali before the collector ship. You need to pass Horizon though.
When it comes to story driven games though, wiping 5 times to get farther in the story just pulls me out of the game. It would be like watching the same 5 minute action sequence in an action movie 5 times before moving on.
Different strokes for different folks and all that, but that is just my opinion on the matter.
