Purpose of Surveying planets in ME2?
Does surveying and probing a planet yield anything besides minerals? Does it reveal anomalies? Does it open up quests?

In ME1 checking every planet helps find the landable planet, and also helps you get the "find x number of y things" assignments. Which are not required at all.
You also get XP so you can import into ME2 with bonus

Only from the planets you can actually land on & explore, though.

Then the actual probing doesn't reveal anything. It'll tell you if anything can be found for quests etc once you get to it. So after you visit the planet but before you can click the survey button.
In ME2, the only point is resources. So once you have acquired enough resources, you can stop "planet scanning" for the rest of the game.

You also want to end your ME2 playthrough with 100k+ of each resource, I believe, in order to get the best import into ME3. So what I usually do is scan up to ~200k for Iridium + Platinum + Palladium in the early-mid game, and then I pretty much only need to scan for Eezo for the remainder of the game.

You definitely do not need to scan all planets in ME2. In fact, I don't even think you need to scan half of them to finish the game with enough resources.

Also, in ME3, the planet scanning does open up anomalies and quests, sometimes you'll gain a War Asset, sometimes you'll gain some credits or even ship fuel, etc.
It also gets you to read all the planet descriptions, which have a whole lot of flavor and add context to the universe. Even moreso in ME3, where the Reaper impact is described in them.
Well, you also can find some short side missions with scanning.
But only on planets where a voice says " anomaly detected" when you click on them.

This is actually inaccurate. There are a number of quests that you will never see/receive if you do not probe planets. I dunno, 6 or so. They will never show up in your quest log any other way. You find them by surveying and finding a signal.

Yeah I think you're right. Anomaly detected. Thanks for pointing out the correction. I think I forgot about it because I usually just pull up a list of all the "anomaly' planets on my smart phone and go straight to those first.
Finding side quests randomly is rarer in ME2, but at least they aren't copy and past levels.
