I would think by day 20 something in game that the meat would be dried and not still dripping blood.
Drying times - between one and twenty real world hours
Vanishing Food Sources - Virginia, Kelvin(?), Raccoons

Things that affect the speed of the drying rack- Being inside, being near a lit fire, being left alone, weather, being in water.
The shortest time is a drying rack indoors in summer with a fire going. Meat, fish, and limbs will dry in about half a day (one-two hours in my world)
The longest time is about a week in game. That's a drying rack outside with rain/snow in winter, with some or all of it in water (shore line or river ankle deep or more) and no fire or torches near it. Anything that would have taken longer than a week on the drying rack has usually spoiled before it finished so I don't have any of the 20 days meat still raw observed to go on.
When the meat/fish/limb is dry I've been able to store it on a shelf without npcs bothering it. So far no missing flesh. Raccoons, Virginia and Kelvin don't seem to take things from the shelf, also seagulls aren't attracted to it. 7 meat will stack, 3 fish, or 2 limbs. With 4 spots on single shelf or 12 spots on a tri-shelf you can math out how much can be stored in an area.
Calorie consumption is about 2-3 pieces of dried meat per day. (Very thankful that day length affects hunger/thirst ... hate games where my char is eating 50k calories a day because they need 3 deer and half a dozen rabbits of meat every day just to survive: I have hunger damage off, but no food, no water, no sleep means almost no stamina.)
edited: raccoon -rac = a censored word apparently. I'm glad I don't know why nor do I want it explained or to look it up, but I wanted to remove it.
jokes aside, meat is kind of not worth it imho.
it spoils quickly and there's plenty of alternatives.
