I just edited that post awaiting moderation so in case you can't view it right now..
Just adding this as I encountered the missing save issue and the guides I saw were out of date. Short version is, I found backup .zip files earlier guides seem to not have so assuming this save backup was a feature added later.
Hope this helps, I lost my day 54 save to find the most recent available was day 47. I'm back to day 54 again.
Go to %userprofile%\AppData\LocalLow\Endnight\SonsOfTheForest\Saves\ and make a copy of the subfolder, which will be a random number.
Click through that folder and into either single or multiplayer folder depending on your save type.
Extract the contents of the .zip backup file and copy to the same relative location, so what you extract from the .zip file should be now found at eg
"C:/Users/<USERNAME>/AppData/LocalLow/Endnight/SonsOfTheForest/Saves/<NUMBER>/SinglePlayer/<NUMBER>/<SAVE>.name"
"C:\Users\<USERNAME>\AppData\LocalLow\Endnight\SonsOfTheForest\Saves\<NUMBER>\SinglePlayer\<NUMBER>\SaveData.zip"
"C:\Users\<USERNAME>\AppData\LocalLow\Endnight\SonsOfTheForest\Saves\<NUMBER>\SinglePlayer\<NUMBER>\SaveDataThumbnail.png"
