Report a translation problem
Incorrect, dried food does not rot. I use drying racks to keep food from rotting then transfer the dried meat to shelves. You can cook it even after it's dried so it won't wreck your thirst. Or you can use the dried meat to make stew.
Edit: It's a visual bug. It looks like it's spoiled on the rack but when you pick it up it's dried. Yes, you can cook spoiled meat so this whole point is irrelevant but to try to preserve my immersion I tend to avoid bugs when I can.
Hardcore? Let them have eat 5 horses a day
Hardcore? Just give the Mobs Triple the HP and Double the DMG

I find that method of difficulty increase to be tedious and annoying. But as a wise sage once said, "people have their preferences"
You can cook rotten food anyway, so unless that gets patched at some point... drying food to store it is pointless.
