If yes, I'd say likely they're counting those as dropped and they'll despawn the way throwing something on the ground would. Possible solutions, though I've not tried, and someone else can maybe confirm this works or not, but is it possible to put a canteen on a shelf in base or a pot with something in it. If yes, this would solve your storing water issue. If not, they may be looking to provide this as survival aspect requiring you to trek to that stream multiple times in winter.
Subbing as I'm curious to learn more.

also kevin seems to add a pot to the standing torch fire if you tell him to complete building it but it appears non functional.

So you can have one on a shelf and one in inventory? Does it matter if it's a different shelf and different player in MP?
it could be if there is something in the pot or not that causes it to not be "shelvable"?
or the game thought the shelf was full.
anyway i think it's safe to say better to shelf/stock the ingredients and then combine them when you need to eat the meal. kinda like IRL if you don't have tuperwares & a fridge
You CAN run and get a bunch of pots and place em' on shelf slots , but the game will remove pots and clear the shelf spot while leaving the very first pot that occupies a slot when you save and quit.
You cannot place one pot per shelf in order to try and fix this. it will still only save that first pot places.
you can put a pot on a standing torch looks like but haven't messed around with those much due to the burning fire hazard issue
in the first game pots could be used as a crafting ingredient to collect Sap. but looks like no sap required yet.
I'm not seeing a way to drop a pot when you only have one, only as like when you are at max level of sticks and you can pick one up and in order to switch items, you drop that maxed out QTY item because you can't store it. That stick will despawn if I am not holding it and leave. Sticks are just much more plentiful, so there will be new ones dropped in on my next load, or if I leave the area and come back.
Has anyone collected one and been able to drop it where they had none?
In the first game if you didn't use it for sap where it was a placed item (like placing a log in a build vs leaving on the ground) it would disappear if you already had one in inventory. I think they might be enforcing something similar here.
