People in the sim racing community use this formula to get their proper FOV.
tan(screen_width * 0.5 / screen_to_eye) * 180 / pi * 2
unfortunately I think this doesn't apply to a single monitor setup and sons of the forest.
They either need to auto detect ultra widescreen resolutions and adjust the screen edge effect (like The Long Dark) or they need to add vertical and horizontal FOVs. Wouldn't hold out hope though, if they hadn't done it before release during the very basic graphical and menu setups, its highly doubtful they will now.
