Is there a way to share a savegame?
If playing coop with another person and said person is the host - is there a way to share the savegame and continue playing when the host is offline - maybe even just copying the save-file etc. or would copying break the game since the savegames always thinks you are the "host"?

Should be possible. The saves are in appdata/locallow/endnight/bla bla bla you wou will find your way from there. Make sure to pick the correct one however. The last modified date on the folders seem to change every single time you open the game hence finding the latest one can be annoying

Oh I should also mention that would count as 2 separate save games. Hence you would both need to exchange them again the moment one of you builds anything or they would be out of sync. Imagine you build a huge tower and so does your friend but in a different location.. Now what? As of now one of them has to be sacrificed because the architecture .json file is a mess and I doubt many know how to add/change structures within it

If multiplayer saves work the same as singleplayer ones then no. Player inventory is being written to a .json file which is how non-hosts save. The host should have both the world .json and inventory files which should also work for other people if shared. There is a possibility of you having the exact same inventory as before (which would otherwise end up as the inventory of the host) by replacing the correct file responsible for handling the.. Yeah, the inventory. Who could have guessed? The only problem is I have no idea whether the name of the save for the host is the same as the name of the save for other players. Hence you MIGHT have trouble finding the exact file from that exact same file. If that is not the case then make sure to not override the save files created by you

IIRC you can also make singleplayer saves multiplayer by just dumping them into the multiplayer folder. That could also be done in The Forest if memory serves right and should work both ways
