Building Limitation, or me?
I'm wondering if I just can't figure this out, or if I won't be able to do it anyway. I was thinking that it's a simple basic thing that i'm trying to do, but i can't seem to make it happen.

I've tried and thought about different approaches, but none work. The build in these screenshots are only to show my dilemma - was pretty sure already it wasn't going to work when i went ahead and put this much up.

If imagining an overhead view, the footprint is a cross. The center is to be square, a bit taller, and flat roofed...then 4 extensions on each side of the square which are each gabled the same way. You can see the unfinished roof section in this one, on the right.

In this one, on the left, of that unfinished roof section...I can't put the remaining downward log. (? I do seem to be able to put vertical ones at the 4 corners of the central square to finish that how i'd want it, which isn't done here and i'd do later if this problem didn't exist), It won't take the 2 ramp downward logs of two perpendicular roof gables coming together at the same joint.

I've thought about or tried different approaches...like building the center and each of the 4 sides as separate structures, total 5, and just right next to each other...but of course they end up at different levels because they don't share a common foundation.

Looks like you've found one of several odd limitations.
I have one myself, where I had to lay floor boards in the opposite direction of other floor boards, simply because after placing the first floor board the "wrong" way, it would not allow any more to be placed in that direction. Pull them all up, lay them down the other direction, works perfectly.

I fully and 100% expect these kinds of things to happen in an Early Access game and am not going to get bent out of shape about them, unless they simply go unaddressed after the end of Early Access.

I'm just wanting to make sure whether or not i can do it but just haven't figured it out.

Originally I was thinking instead of having the 4 gabled sides come together such that each 2's common down-log was at a 45 degree angle and that roof section was actually a kind of trapezoid...am wondering if that would work, as a solution or just if it'll work in the first place.

I've not ran into that. I have built very intensively too. ( look at my SS and you'll see) It's very odd to say the least. I'll have to try that later and see what happens.

Make sure theres no rocks or other scenery blocking your build i had to move more than a few buildings due to one rock blacking what i was building or a stump or a rock that just needed picked up,i had the same issue with a downward facing beam i had to remove all the planks from nearby and build the frame before placing beams..same with stairs put them down before you start to put up walls or roofs

if you try something like this, and it works, i'd love to know about it :) I'm not able to see your screenshots though.

Try and removing all the roofing planks on both sides that are closest to it and see if you can get it to be placed down then, sometimes there's weird orders on how things will work when placed down, Once you start with the planking it can get a little funky with things, Also once you have it taken apart see if you can take the one thats already built there out and switch it over to the side that is giving you problems and see if you can then place another log back to the side where it was working, The only other thing i would suggest trying is placing some half logs as struts on each corner of the logs that have the vertical roof sections then seeing if it will work then. Sometimes things just can be a little funky with the building and one tiny thing can make stuff not work as you want it.

I don't know what feature of this you're referring to
