You named Rust and Green Hell. While both have already dated graphics, so let me name another: Escape from Tarkov is using Unity.
software does not age, it either gets better or abandoned
So I think it is a matter of ignorance/prejudice to be surprised. But hey, that is fair enough - no offence intended. Afterall, the tech behind a game should not matter much. It should never be a selling point either for or against a game.
Subnautica (and sequel) was made with unity, as well. Many more.
In my steam library I have around 118 Unreal Engine games and 85 Unity games.
Both engines are pretty good, though there are by far more Unreal Engine games i like than Unity games but that's rather bc of how good the coding skills of the devs are :p
And since I know "The Forest" very well I'm sure that this game will be nice as well.
You can also add some more to the list of nice Unity games.

Where have you been to have not heard of Valheim? It was almost all that any streamer, gaming website or gaming magazine talked about in 2021
Unity support DX12 since past november (much more time -much- marked as "experimental"). Vulkan also, a lot of years ago.
