Edit: Two more died by walking into my spiked wall. One by trying to body slam it (also lost a leg). One by just walking into it while trying to circle me (lost an arm and bled out). I used the same spacing (mostly) as when building a stick fence. I think it's safe to say they're definitely useful.
As far as I can tell, the only effigies currently in the game are the head-on-a-stick effigies. You can dismember bodies, but that seems to have little value. You can use arms and legs as weapons. And you can eat them (they do fill up the food bar, unlike berries, but do not regenerate health like the regular meat and fish). There doesn't seem to be a sanity mechanic.
