Where can I see stats? Also, item hotkeys?

In the original game I was able to see stats like sanity, weight, strength, athleticism, and status effects in the building book. Are these stats present in this game and if yes how do I see them?
Also how can I quick swap items from the backpack? I know holding down the inventory key I can quick swap from there but what about binding weapons and stuff to number keys?

actually there is form of sanity, more you eat human meat they will become more agressive and will fear you more if they dont have weapons and armor, same goes for creepy armor you have on, at least that is what i understood from wiki

edit: and there is strenght level
