Turtle shell
Has anyone figured out how to use the turtle shell like in the forest?

I was wondering the same thing. there is a "cave" that's a green marker that has a 3d printer in it. you can print a sled and go sledding. highly recommend

The point is valid though. Fresh water is incredibly common, has zero down sides to just drinking from the ground, and you can get a canteen. Theres almost nowhere on the island you can't get nearby water.

I've run almost half the islands coast now, and the only places without a puddle, pond, lake, or stream are desolate and void of content. There'd be no reason to build there.

It's 100% possible that the shell was added in as an Easter egg or call back to the first game.

If you want a tip for getting water, you can also eat those white flowers called yarrow, which are great for both food AND water. if you go slightly north, around the path, right where you start the game, you will find a biunch.

How do you place it on the ground?

This. Please. I even read a short guide that said it will gather water if you place it on the ground, but didn't say what button. Even pressing the assigned "drop" button just puts it back in my inventory. Nothing puts it down.

This exactly. none of this intuitive. I've been trying to figure how to drop or place things for hours. I cant get rid of the head I'm carrying, use a turtle shell for anything, the excessive amount seeds.

This is not an answer to the question, but it's super important to remember that this game is in early access. Every time on the main menu there's a countdown to the next update. It might just be something that was put on the back burner because it wasn't considered important enough to start the game off with. As others have mentioned there's plenty of water to be collected in the game, and 3D printing a canteen is very easy. That being said I would still like the option to collect water in the turtle shell so that I don't have to leave my base every time I want to get water
