Imported models not working?

They don't appear in game, only about 4 of the Live2d models downloaded from facerig workshop work

Majority of models on Facerig workshop were created in earlier version of Live2D that Vtube Studio doesn't support.

In summary, if your model files has files in *.model3.json or *.moc3 you can load them.
Otherwise if it's *.moc files, you can't.

Ah, that explains it! Is there a way to convert/update the old models to the new/supported format?

You can't unless you have the source/project files. So your best bet is to contact the author of the models to convert the model to newer format.
